Hi,
I’m about to deck the attic of my new 20 X 40 garage. The space is supported by manufactured beams, etc and measures 20 X 40.
The space will be used for major wood and glass storage and receive reasonably heavy use.
What materials should I use? Any guess on the cost per sheet of the recommended material?

Your post says "manufactured beams" I assume that your attic space is designed for a heavy load? make sure you know how much the attic was designed to hold.
Anyway. I'd use regular floor decking, advantech makes a tounge and groove floor that is lighter than sturd-i floor. I just replaced my kitchen floor with it. About $16.00 a sheet
I wouldn't use what they sell as "attic decking" the smaller sheets of fiber board, it is weak and I have have stepped right through it.

You should you something that has the proper span rating for your joists.
I used 3/4" T&G ply for my 2nd floor shop floor. Except for a few exceptions, plywood is rated at 100#/sqft at max span.
It may be a bad idea to store wood on the floor. I store my wood on wall mounted racks.
