Can someone shed some light for me on how Builder’s Grade differs from other grades in terms of the following items:
Light Fixtures
Plumbing Fixtures
Carpet
Ceramic Tile
Kitchen Cabinets
Vinyl Siding
Please don’t flame, just trying to learn the difference…

builder grade = cheap.
Usually used for things that are easily replaced down later on.

Talk about an oxymoron. I'm not a big advocate of any vinyl siding. Builder grade vinyl is probably thinner than "good" vinyl siding. We change the course of history,everyday people like you and me
Yeah, in vinyl siding it'll be thinner and less UV-resistant, meaning that it will fade and haze quickly. Also likely won't lay as flat.

Don't let anyone spec your contract with builder grade. That's a lazy greedy contractor that is more than willing to spend the time to spec a product for an upcharge rather than specing out a decent product from the get go.
Builder grade means what ever I show up with like it or not. It's a big cop out.
Have him spell out evrything and give you enough info to make a good decision.

Builders Grade generaly translates the cheapest product they could find to install.
Websters: Builder's grade; something you wouldn't want in or on your own house.
