I am using raised panel hemlock doors in my new house. I was considering painted MDF (ouch) for casing and floor moulding. Now I’ve decided to use a “real” insted of MDF. I would like to use a stain and then Daily’s Sea-Fin (an oil) for the final coats. I was considering VG Fir, but now considering Hemlock. Any pros or cons to using Hemlock or other ideas? My cabinets will be made of Hickory.

If you are staining your mouldings, I like the look of consistant trim and doors. Be sure the mouldings are not very old if your doors are new. You could wind up with a different shade from the doors. Many stock pine mouldings are now being made from Yellow Pine and don't look good with Hem doors in my opinion.
MDF is a great way to go if you want painted wood work. It paints well and saves on paint labor. It is more stable than wood so you don't have joints opening and closing due to humidity swings.
