used coolers.
They come apart, go together well, have non rust or degrading finishes, floors and ceilings included...............good fitting doors.

Used coolers? I assume they are also more affordable than new ones or customized ones?

Call the companies that build them.
They occaisionally have used ones they will sell for cheap.
If you were to try building your own, go look at what the pros are doing.
If never tried looking, but you may be able to buy the components online.
Also, one of the companies might be willing to sell components, if you are buying the compressor, condensor, and evaporator, and they are installing those.
One of the guys that works for me, used to run a company in Texas that did walk ins.
He got one of the nearby (there aren't any locally), suppliers to sell him all the components for a small system at his house.
Be sure to check ebay. There might be something close to you.

Restaurant suppliers or out of business business's would be the place to check.
I've put together several restaurants and bars and only the ones with deep pockets buy new-the rest get 'em used from the suppliers and as Jigs said, perhaps even those that service the compressors etc.
And / or beverage installers/suppliers.
