Recently we switched to a door supplier who sets his hinges proud (above ) the jamb and the leg of the door. Our other suppliers set them flush. He argues that by setting higher you will have less binding and easier adjustment. also occasionally we will get doors bored for locks on the foam side and not the wood side. He claims it makes no difference with metal or fiberglass doors. Any comments ?

By not mortising the hinges flush with the surfaces of the door and jamb, you supplier is indeed making it harder to get hinge bind. He is also increasing the door to jamb reveal on the hinge side as well. But unfortunately, he is weakening the connection, between the door and hinge, and between the jamb and hinge.
The purpose for hinge mortises is not only to maintain an equal and pleasing reveal around the door, but to increase the strength of the door-to- hinge and jamb-to-hinge connection. Without any mortises, all the loading is put on the screws and transferred through them to the relatively miniscule surface area the screws are in contact with.
As it is, hinge leafs are getting thinner and thinner each year, and their corners are showing up with bigger and bigger radii.
The best way to eliminate hinge bind is to backplane the hinge stile as will as the striker stile. That way, the hinges can be fully mortised.
I haven't a clue what he is referring to about "easier adjustment". I think he either has his head in a place where the sun don't shine or just threw that in to overwhelm you with his reasoning.
Backplanning doors requires one more step for most door manufacturers. Using square hinges requires and extra step for everyone. I think both are worth the effort.

Thanks for your advice, I agree 10000000000%% and I am actually not going to use this shop after we pay our bill after back billing him for all our time resetting hinges etc.
