I do my own drywalling,And someone asked me to do theirs. The only problem is the house is 100 years old. It has horse hair plaster.Do I remove it or drywall over it? Also the house needs insulaton. And what do I charge. Give me some advise.

You can drywall over the plaster, but then all the doors and windows need extensions for the trim.
If you tear off the plaster, then chances are you'll need to shim the walls to match the window and door jambs- plaster is usually thicker than sheetrock.
What kind of insualtion does the customer want? It can be blown in if the plaster is staying; batts can be installed if the plaster is removed.
If you do your own drywall, you should have a handle on how much time it takes, and what to charge. Price varies greatly by region, and what you're actually worth.
