I dismantled and reassembled the front doors on my 1872 house using all the original trim. Limited by the size of the original trim, I ended up with some small gaps between the trim pieces.
What paintable caulk would you use? For most exterior work, I use one part polyurethane but in this case, its very messy. So what’s your favorite choice in caulking? The doors at this point are stripped ready for caulk and primer.

I would stick with the urethane. It fills well, don't shrink and takes movement excellently. You can dress the job w/ masking tape each side and coving the caulk. Sometimes a square edge joint looks better, urethane can be tooled with a blade soon, or dressed up later with a knife.
If the gaps are even, can you step the distance another time with a thin pc. of wood?
