This is going to sound dumb, but can you replace just the faucet handles, and tub spout with a different manufacturers brand, without having to replace the actual valve itself?
I think I have an old (maybe 7 years) Price Pfister “cheapy” tub/shower setup (two handled faucet, nothing fancy) in chrome.
I’d like to get rid of the ugly plastic handles and maybe go with something a little more elegant (brushed brass or nickel or whatever).
But I’d really rather not have to tear out the valve assembly and have to put a whole new one in (pain in the butt especially with the soldered connections).
But I don’t know if you can just buy a Moen or Kohler or whatever, and simply replace the handles (the shower head and tub spout I’m pretty sure you can do that).

Generally, no. But some two-handle units probably have standard stems. Take a handle to a hardware store and see if you can match it.
You might want to contact Price Pfister about this.
They may have other trim that will fit this valve. Unfortunately, sometimes the valve is changed so drastically that new trim won't fit on the old valve. Then it's a matter of finding old trim to fit the old valve.
Depending on how old this valve is, it might be better to bite the bullet & get a new ceramic disc valve if you're not going to upgrade to thermostatic.

Yeah, I'm thinking I may just get a Moen faucet with their mpact system.
