Is there a standard to tiling the area around a bathtub when you are not finishing the rest of the bathroom area with tile for the edge around the perimeter of the bath/shower area?
Should there be a bullnose tile arounf the top and down the sides so that the area looks closed off or is there another type of tile or way to finish off the ends of the bath area that meets the bathroom walls?

Generally bullnose is used. You can certainly use any other type of transition that seems appropriate, though. And some tiles have edges that are tapered & glazed enough that they don't look too bad without bullnose.

One alternative you could look at, down to the tile store, is to use a purely decorative tile border strip. While these are not generally bullnosed, the edges are usually finished all the way around (a side effect of their hand-finishing).
But, if you are looking for a clean, unobtrusive, edge, then use bullnose tile (remember to double check for how many double-bullnose--edged two sides--you need, too--that's a long drive to the tile store to find they closed 5 minutes ago).
Bullnose is common, but you could also use a metal/plastic strip, or if you are comfortable with the wetsaw, you could miter them.
