I posted this over at JLC as well, and it was recommended I get the advice of some Breaktimers as well.
My metal roofer won’t call me back, so I’m stuck putting a metal roof on a 5×5′ cupola. The cupola is made of SIPS and will be built and roofed on the ground and lifted into place. It has a pyramidal roof with a 9/12 common pitch. I plan on wrapping the whole cupola roof in IWS. The main roof of the barn will be Fabral snap-together standing seam.
I’m thinking the best way to do the cupola roof will be flat seam with matching coil stock. If I used the standing seam on the cupola roof, I think the hip flashing would stick out way too far. I haven’t done flat seam before, but I think it should be pretty straightforward. I was planning on hemming the flat seam panel at the hip and then sliding a hip flashing up over those hems (as opposed to screwing a cleat down along each side of hip and sliding the hip flashing over the cleats). And I guess I’ll have to fabricate a pyramidal hat for the peak that snaps over some closure strips.
Any of the roofers out there have any further advice?

I don't have much to add to that other than pay careful attention to your laps since you can't solder this material. You'll be depending on your folding for it's water tightness.

do you mean matching steel ? or aluminum ?
are you concerned that the pre-bent factory hip covers will be too large (in width) ?
this is a large cupola.
it seems like it would look and work better if you used the same standing seam material to cover the roof and then custom bent a smaller ridge cap, if that is the part that's bothering you.

I'll be using painted steel coil stock.I just think that with a roof that small, the whole roof is going be hip flashing. Doing it flat seam, will keep the profile of the roof much smaller. Do you think I should use some sealant on the seams? I have some butyl tape or Sikaflex.
Bend the hips up so you can lock them into a standing seam as well -- no extra flashing needed.
It will look really clean and compliment the main roof.
