I found some dark spots on some new drywall that had been delivered to my job. It appeared to be mold but after a closer look it brushed off easily in most spots. A few places left a stain or two. Also this drywall had a date of 08-04 on it so I don’t know if maybe it was mold but now is dryed up. Has anyone ever seen any of this or do you happen to know does mold just dry up?

From here it's hard to tell. Could have been just dirt. Could have been mold, too. Mold can just dry up if the drywall dries out.
You could take a bucket with a quart of water in it with an ounce of household bleach. Rinse a sponge in it and go over all the dark spots. Don't overly saturate the paper, but get it damp. Then put it somewhere with good ventilation to dry fairly quickly. If it was mold that treatment would kill it. Even if a slight stain were left a primer would cover it.
Even that treatment is overkill. If the drywall is installed anywhere but a bathroom or basement it will never see enough moisture for any mold to become active again. There are mold spores everywhere anyway and they'll start growing as soon as a damp surface and food source present themselves whether or not there were any on the drywall when it was new.
