Galley is two opposing walls with cabinets, with an aisle in between, right? Depends on the number of cooks. For one person in the kitchen I would not go less than 60" between cabinet faces. For two people, I'd seriously consider 72". When you have open doors (oven, dishwasher, fridge) and people dodging around them, more space is better. A galley kitchen can make an exceptional work triangle even with a wide aisle. Figure twelve feet of cabinets either side can give you lots of room for a sink, DW, fridge, range/oven and plenty of countertops. So, 72" + 2 countertops (25.5" each) = minimum 10' - 3". By 12' long. Small but efficient.
