I had granite counters fabricated for a spec. remodel I am doing. I have to seam it at the sink. Just recently I was doing a kitchen, and the cabinet co. had a granite fabricator do the counter tops. When they did the seam, they used a PSA sanding disc, at about 1000 grit, to buff the seam and smooth the epoxy-seam fill. They spoke very little English so I couldn’t get a clear answer if the sanding disc was a special material, or just a generic type of sanding disc. Would anyone know what kind of sanding disc you would use to buff the granite?

We install quite a few granite counter tops and never do any sanding when installing. Instead we apply tape to mask each exposed face of granite to be joined, place the stone properly , fill the seam with filler, and then use a single edged razor as a putty knife. We then peel off the tape and clean up with another fresh razor. Works every time.
Good luck.
the type of sandpaper grit after a certain point is registered as microns 60,70,80,-etc. there very fine and stand up to the slurry thats created regular sandpaper will stand up but the "special " microns enhances that medium your using. porter cable makes this paper i could only find 6" in my neck of the woods. and it's not cheap. i do a final with ash( volcanic), than talcum powder with surprising good results. than a sealer, let me say though i'm a carpenter that worked with a stone guy for 6 months back in the early nineties. but i get pretty good results but nothing replaces a professionals advice......... when all else fails ......the internet is my pal....cheers bear
