Is there a way for a HVAC technician to look inside HVAC trunks with a camera. The trunks were constructed with fiberglass duct board. Everything inside the walls is rigid sheet metal. I’ve heard some bad stories about duct board and mold accumulation.

Many choices for tools, access possible from the equipment end, or from vents.
It also is possible to make a small hole along the way, and seal after.
You also can get a mold test kit.
Never thought of that. Good idea. In any event It would be nice to replace ductboard with sheetmetal. In addition, the HVAC bulkhead takes up lots of headroom. I'm hoping their is a chance to resize the trunks without throwing the system off balance.
A careful analysis of your hvac system would be best if you want to rework the trunks to reduce intrusion into the occupied space.
You may find a local hvac place willing to help (there is work and time required, so expect to pay them), or you can climb the learning curve.
