I’m curious about framing a floor using I-joists. How do frame out something like stairs? Do you double up the joists? Do you use some form of hanger to attach joists together???

John, I-Joists are the greatest invention since plywood. Every manufacturer puts out an installation booklet that covers questions like yours and has good illustrations. Any lumber yard will have one for you.

Openings can be framed by either doubling up TJI's as required, or usually more easily by using an LVL or equivalent beam.
When doubling TJI's a plywood strip filler is added between the joists to fill the gap between the webs. They are then nailed together.
They can be hung off headers. There are a variety of hangers available, there was a brief hanger discussion a few threads back.
Get one of the booklets and check them out. They're quite detailed in what and what can't be done.
