Have an old house remodel. External wall is 3 brick thick then plaster. Have furred out plaster wall with 1x2s and getting ready to put new drywall over strips (interior wall). Can I insulate between drywall and plaster with cut foam panels? Do I need plastic on one side or the other to prevent potential moisture coming into contact with drywall? Thanks for your help.

You can put in insulation between the furring. (It would have been easier to cut the insulation while you were putting up the furring and using it as a spacer.)
You do not need to put up a vapor barrier but it won't hurt either. You could put up another layer of insulation over the furring and screwing the drywall through that if you want more insulation and can afford to lose the space.

if you're in an area of the country with a long heating season the vapor barrier will go on the inside toward the living space of your walls.
It is common to use foil backed foam board with foil tape on the seams to kill two birds with one stone.
