I am going to start installation of crown molding in my own house. One room will be done in pine and the other room in MDF. I have the moldings in the garage and I need to bring them in to acclimate. How long would you keep them at room temp before you installed them? Also, in the cold winter months when I bring them inside will the tend to shrink or expand?

I typically like to allow any wood products I'll be working with to acclimate for about two weeks prior to installation.
I'd allow the pine a week to ten days....this is not necessary with the MDF.
Once the pine sits inside the heated home, it will likely shrink somewhat. (Unless of course it is currently drier than the homes interior. i.e., steam heat may cause it to swell.)

I question weather MDF is truly dimensionally stable. I've used as a defuser for ceiling lights in a warm nursing home and found it shrunk in all directions. I'ld bring your crown in and let it warm up for a week.
This may sound silly but I’m kinda anxious to get going on this. My coped joints come out good but I'm slower than molasses. The wood is still in the garage (outside temp)and my question is, could I make my inside corner cuts and do my coping now and leave the piece long to be trimmed and then bring the wood inside? Or, as the wood shrinks will this mess up my cope?
You'll probably have to fine tune each coped end as you install anyway, so an advance prep wouldn't hurt anything. The Pine will shrink with the grion as it dries, but will not shrink lengthwise. The MDF is nearly opposite. It is unlikely to change noticeably in width , but it will grow longer with the warmer temps inside.
