What would be your product of choice for filling knots, gaps and bevels on the inside of a plywood laundry chute? I thought about drywall mud, but there are some spots where depths will exceed 1/2″. It will be painted.

Bodyfiller.
Sets up almost immediately, fills deep, sands smooth.
On the downside any filler will chalk up clothes after the primer wears off.
Pesonally I would look at lining the shoot with masonite, or using metal ductwork, or MDF for a laundry shoot.
Plywood has too many hairs and will catch loose threads, socks and rip the heck out of yer pantyhose.

Joint compound would probably work, but it would take several coats because of shrinkage. A better choice would be a setting compound such as Durabond which doesn't shrink and adheres better.
I agree with the suggestion to use Durhams water putty. It's good stuff. Dap also makes a water putty that is a very similar and a littler easier to work with.
Yet another choice is Dash Patch which is a setting compound used for patching irregularities in flooring.
