Was in HD yesterday looking at some boards marked as maple, noticed they had light green streaks just like the poplar boards in the next rack. Are they trying to pull a fast one or is this normal?

mixed up stock?
It's certainly not unusual to find the stock mixed up. Sometimes by the customers, at least as often by the stocker. I doubt that it's intentional (in 95% of the cases) -- more likely just a clueless stocker (and management who doesn't care to give the stocker a clue).
You really have to be careful picking out lumber/trim at such places (HD, Lowes, Menards, and most of your indy yards that have open stock like that) since stuff is so often mislabeled.

Right you are - I picked up a nice stripy maple board I needed a couple of weeks ago and found it was labeled as birch which costs a lot less.
I don't mind paying for maple priced as poplar, but draw the line of the reverse.

Poplar has a lot of variation, some looks a lot like maple. One good way to tell the difference is weight. Hard Maple is much heavier than Poplar.
