I have recently started remodeling an old post and beam barn that was converted into house in the thirties. The second floor was left untouched, and now we are looking at insulting and dry walling etc. The rafters run from a knee wall to the ridge with 6×6 beams acting as collar ties. We would like to strap then insulate and dry wall the rafters essentially leaving the ceiling vaulted with only the beams exposed. My question is do we need to run continuous venting from the soffits ridge? What are the pros and cons? Do we have any alternatives? Is there a potential for moisture damage or damage from snow? Any help or advice would be greatly appreciated.

Are you going to leave the collar ties in? will the sheet rock run up rafters then across the ties? You should run baffels from soffit to ridge if you plan to heat the area. Using ride vent on the roof, If you keep the collar ties and have air space above them then a gable vent at both sides would do the trick.
*It depends a lot on how deep your rafters and your pockets are. Unless the rafters are deep (and it's hard to believe that an old barn has more than 6" deep rafters) you will have a hard time ventilating the roof and getting a meaningful amount of insulation in. I would shove as much insulation in as you can get and put in the best vapor barrier possible and forget about it. Dense pack cellulose is ideal for this situation. When you redo the roof, consider making a cold roof if you can budget it.
*By strapping did you mean furring out the rafters for more depth or strapping the bottom of your birds mouths to the top of the plate with a bracket? Forget my 1st question regarding the collar ties, I missed it in my 1st reading of your post.
*I meant to mention the rafters are only 2x6, and were afraid of loosing insulation space. Would foil faced polystyrene work as a vapor barrier as well as add a little more R value? Or Should I staple thick mil plastic instead? What do you suggest? I've never heard the term cold roof before. What is that? By the way budget is strained to the max. Thank you for your input it is greatly appreciated.
