This question is about re-modeling a kitchen. I would like to build a 6-inch soffitt between my ceiling and the cabinets because I would like shorter cabinets (36″ high, not 42″ high) on the shared wall with my refrig and stove….it is a short wall so I don’t want to overwhelm it with cabinetry. The question is: Do I run the soffitt the total length of this wall (which is 103 inches), even though it will “jut out” 12″ where the refrigerator is placed.

Consider making all the soffits 24" deep. In the part that sticks out past the cabinets you can install recessed lighting for you counters if you like. If not, it will still set off the full height ceiling, making it appear taller. The soffit need not be the same depth as the wall cabinets.
*I don't really get from your post the aversion to 42" cabinets? That 42" cabinet will allow you a more graceful transition with the fridge and stove. I would skip the soffit all together if I was to do a 36" cabinet. I would only build said soffit if it was important for lighting or venting. Otherwise, the 42" is the most elegant looking of all the cabinetry layouts, and there is no wasted space.I've done in the past the 42" cabinet for a woman 5' nothing and she used the extra space for things that were out of season. We put over her fridge a cabinet that was 24" deep and 15" high. It blended in with the over all design and was a great place for huge pots and pans.
