Where would I start installing shingles on the north half of my roof?
The two valleys and 2’ jog north in the roof makes it confusing for me. And hard to figure out how to make all the rows line up.
I also have one of those fake metal chimneys for my HWH exhaust. Last roofer just caulked the crap out of the north edge by the ridge. Is there a better way to flash it without relying on sealants?
Is it worth the extra time, $, and effort to replace the individual metal vents with ridge vents?

You can make up a story board for the shingle bottom. The package will have an exposure for the shingles you use. then you can use a chalk line to make them as perfect as you want.
Pick a baseline for the story board you will make, likely near the top. you can set this to b parallel to the long part bottom of the roof.
A local building or roofing supply company should have suitable flashing available for the water heater vent.
Your choice for the ridge vent vs all those individual vents. Good practice to replace at reroof time anyway.
The driver is enough net free vent area, split top and bottom, for your construction.
