I plan on replacing my termite infested sills. What is recommended to seal between my stone foundation and the new pressure treated sills? Would using old motor oil on the top of the foundation a big no no to keep termites at bay?

Motor oil will not stop termites. The only thing that will work is periodic soil treatment by a profesional with access to the right materials. If you had termites in your sill it is possible you still have an infestation in the structure of your house. Again, a professional can check this out for you.
*Some sort of capillary break is usually recommended, and often sheet metal is inserted with the exposed edge outside bent down. The metal, I hear, doesn't stop the termites, but it makes their mud tubes more readily evident.The motor oil would make a mess and would be an environmental hazard.
