I am in the process of installing new windows in a house that has plaster walls. Plaster is about 7/8″ thick, more or less. Will 16 gauge finish nailer shoot through 3/8″ oak casing and plaster? Will plaster blow out? Any helpful advice out there?

Mine will. I have a Paslode finisher 16 ga. I use 2" nails into plaster & lath, no sweat.
I don't know about your plaster for blow-out. I've found that if it's in good shape, plaster does not usually crumble under a gun.

You'll be all right. You could even hand nail (ha, ha)
Even if there is a little blow out you'll never see it because the weak side of the plaster is against the window bucks, well hidden from the outer edge of the casing.
