I chose Anderson 400 series windows for my addition. We’re trimming out the exterior with 5/4 X4 Azek and doing a crown header on front facing windows.
What to use for the sill stock? We’re using the Azek and F/C siding, so we’re looking for longevity here. I’d hate to throw fir or cedar in the mix now. I’d also like something less labor intesive than laminating Azek 1X to make 2x to rip sill stock from. What are my options? Must be paintable.
Also, what are the most appropriate dimensions for the sill to be ripped at? And am I correct in thinking a 15 degree bevel with a little drip dado on the bottom?

Ask smitty to show you his detail using trex. If you have your mind on 2x, trex comes in that too doesn't it?

I installed Anderson 400s in my house and used Hardie 5/4 for all exterior trim to go with the Hadrieplank siding. It can be milled to some extent. I had over 30 windows and bought the cheap Dewalt table saw expecting the dust to destroy it at some point. A diamond blade and a resperator and I was able to make sills and drip cap with little trouble. It gets a bit fragile when cut down small but outfeed rollers and 16 year old sons extra hands made breakage rare.
This is a new home so no exsisting trim to try and match so perhaps the thinner sills don't show up as bably. They look much better that the average new home around here with plastic J channel wraped windows.
While reading your post, my initial inclination was cedar.....then ya went and said ya didn`t want cedar.
Trex might do the trick....I`ve limited experience with it, but I`m still not sold on it. No idea how well it holds paint in the long term.
I typically rip an 11 degree bevel....no hard and fast rule for it.....just the pitch I came across when matching sills some years back.
Don`t forget the drip channel whatever you use!

shoot, use any old 2x & wrap it in coilstock, that's what the fine homebutchers around here do...just kidding...if you're going to paint the Azek, you might as well use cedar, but if not IIRC Azec (or someone) is now selling sill stock...think even big orange carries it (not Azec, but PVC anyway....)
just my 2c worth....
