I am replacing a bathroom floor where an old mud bed was removed. The joists are not level or even, and they are lower than where I’d like the new subfloor. I was considering sistering on new pieces to bring the level up to where I’d like. Is there any problem with this in terms of weight or otherwise? I’m only talking about an inch or so. Could I just cut and nail 2×6’s where I need them to nail down my new floor?

This is fine as long as you use plenty of nails. I would use 2-16d 16"oc and construction adhesive.
