Too soft and scratches too easily unless you're very, very careful.
*Can take hot, cold, and wet, and puts plastic to shame. One of Mother Nature's better offerings. Beautiful stuff.

We had 4' of dark gray/black honed finish italian slate installed in our kitchen on either side of the range. Great material, but then we were after an informal look that could stand up to heavy use.
Giving it a quick coat of mineral oil about every third week keeps it dark. We've never created a real scratch, even with regular daily cooking prep use. The surface will show powdery white-ish abrasion occaisionally if we slide a cast iron pot over it -- but that wipes off with a damp cloth without leaving any noticable trace/scratching.
We were creating a new kitchen in an old house and wanted to keep it in character with the rest of the house. We feel we couldn't have made a better choice.
*Thanks for the response! How long have you had your slate and have you noticed any common substances staining it? Have you sealed it other than hitting it with mineral oil??
