Where are some span tables for doing open-beam floor deck construction, for which V-joint 2×6 T&G is run atop your floor beams as the subfloor?

I can't say I have ever seen a span table for it.
Here, where that style was quite common awhile back, 48" span was common, it did have "bounce" at 48" so some went for 32" instead.

BTW : If you have never used a "Decking Puller" and are going to be laying T+G as subfloor I would recommend getting one for the job if it is of any sizable amount of sq. ft.

You're talking about red pine roof decking, right? Gawd almighty, why would anyone wanna use that as sub-floor?? Sand and stain it; it's gorgeous. People pay premium prices for stuff that looks and wears half as well.

(PS--I don't have any span tables for that, either. I would say, though, that it depends on what you're gonna lay over it. For tile, I would go at 24"-30" max. For anything else or for use as the finish floor, 36" or 48" depending on what look turns the HO's crank (I'm assuming exposed joists downstairs, here).
