Seems to me you'd be risking sealing water vapor in the stucco which could cause it to deteriorate (e.g., spall during cold weather.
I don't know this for sure viz a viz stucco, but it sure is true for other masonry veener products (e.g., brick.
There might be a masory sealer which you could use, which supposedly allow vapro to pass thru but block liquid water.
