I’m in a design situation where I want to put a structural ridge beam into a space that has a masonry chimney running up the center of one gable end inside the building envelope.
I’ve seen recent (less than 30-yr-old) construction where a glue-lam was resting right on a pocket in the masonry, but I doubt that would fly today. How can I deal with this? Is there some fire-safe way to pocket a beam into a chimney mass?

You might want to try an advanced search as I remember this coming up about a year ago. As I remember there was a minimum amount of masonry separation required between the beam and flue, but it was commonly done.
I doubt that you could do it to an existing chimney safely or structurally, but with a new one with proper design ( from footer up to consider the load path and total point load ) you can do it by leaving 12" of masonry between flue ( fire path) and the wood.
