In older homes like these, the main remodeling goal is often a more welcoming, more social, and more functional kitchen.

In my mind I'll use tape on all cracks that I think will reappear.........and that's most of those that the paper has been separated and the board cracked. Cheap insurance. Separations from disimilar materials I'll flat tape to fill the void. Though a hairline gap (1/8-3/16), I'll caulk.
Durabond in the various setting times is HARD sanding. Easysand in the various setting times is easy.

As a rule of thumb, I use paper for any cracks where the 2 parts can possibly move with respect to each other. That's most of them. I wouldn't use tape on gouges or holes smaller than about 2".
I'm a big fan of EasySand setting type joint compound, but, it's not meant for taping large areas. Durabond is best for that. Try to use little enough Durabond so that it doesn't need sanding.

I could make a discussion adding to what Calvin and Don said but they correctly answered your questions.

for drywall repairs, mix plaster of Paris with joint compound.
10 parts of JC and 1-2 of POP.
The mix allows you to rework the same materials until no sanding needed.
You can always use a wet sponge instead of sandpaper.
The shrinkage is less than durabond and easier to work.
As you get better you can custom mix the exact ratio for the right job.
start with the big holes and openings first.
Good luck.
