I’ve got two plaster (blue board) questions:
If I’m installing plaster in the bathroom, should I still use green board around the sink? Will plaster stick to green board?
And, when I hang drywall, I usually always hang the sheets horizontally, since I believe the seams show less. Is there any preferred direction to hang blue board (horizontally versus vertically).

if it's got a chance of getting wet.. use durock ( cement board)
forget about green board.. it's useless..
and skim coat doesn't care if you go horizontal or vertical.. what it doesn't like is movement ... movement will send cracks right thru the board and skimcoat..

My guys use wire on all wallboard joints to mitigate the cracking problem. This of corse means two or three coats of plaster but that is o.k. since we are looking for "depth" when we are restoring or build in-kind.
