Would you put a dedicated water heater fo a bathroom or would having 2 heaters on the system together be better ? We have 4 adults a 2 kids and eaven with large tank we run out of hot water for the showers often. I’ve also thought about an on deman heater.

A lot depends on length of runs. My father built a place that has three water heaters, because the kitchen and two baths are far apart, and each has its own heater adjacent.
The other approach is to design the house so the kitchen and baths all clustered together around a common "wet" wall, to keep the runs short.
I've had good results with two 40 gallon heaters in series. You can take a nice long shower without having to tweak the temperature up.

I put two gas 40's in the last house, one set hot for the dishwasher and clothes washers, laundry tub. The second fed the kitchen sink and bathrooms, it was set not as hot. Put a tempering valve on the hot one to blend warm from the hot to the not so hot. Worked slick. Could flush two toilets and still be comfortable in the shower, never ran outta shower water.
Had 95 psi on the water main, 5/8" to the heaters and then 1/2 to the rest. Would have been perfect if there was a gravity recirculation loop....
