What is the correct terminology for this?
I have some wood that appears to seal where the sides of my house meet the foundation. It has rotted through and I ended up knocking it off while trying to weed eat around my house. I want to try and replace it myself but need to do research on what materials I will need. Can anyone provide me with the correct terminology to research? Is this just trim? or would it be considered a specific trim like water table trim?

It looks like it was just nailed on top of the stucco. I'd use some PVC to replace it.
possibly 1x flat stock used as trim - going to guess that it's about 4 + inches wide and about 3/4 inch thick, so that makes it probably 1x5
as previously mentioned, use pvc flat trim - it'd work a little better with a bevel (maybe 15 - 20 degree) at the top to help shed water away from the building - the flat top allow the water to drip onto either side
