I’d like to put 5″ planks over radiant heat. (mounted in stadler boards). Is this at all possible? I would prefer to steer clear of Pergo/Kahrs etc.
Also, if not, what wood can be put over radiant heat?

Charles, don't say Pergo in the same breath as Kahrs. Pergo is the vinyl siding of wood flooring and Kahrs is the cadilac of the industry. An engineered flooring will be more stable over radiant heating.

*Wood. Almost any wood will do, but I'd prefer to use real wood for all the usual reasons.
