I have just completed a 24×30 addition, and Im ready to trim the windows and doors However the window jambs are 3/16 to 1/4 inch shy of the finish walls in some places how should i get the casing to meet the window jambs hammer the sheetrock down or add extension jambs

extension jambs
Extention jambs---you would be hard pressed to get that much curve out of the trim without the corners driving you nuts.
Jamb material that thick rips fine and nails up easy--save yourself the heartache and save the mash session for under an 1/8.

First, get some 1 3/4" roofing nails and nail the drywall down around the openings such that the casing will cover the nail heads. This often helps some. After that, the normal method is to beat the sheetrock down a little with your hammer - which I guess is what you were suggesting. The reason the back of the casing is plowed out a bit is to help with mounting on iregular surfaces.
