I have noticed as I tore out my walls that In the vanity area there are 2 air pipes that run along side the water pipes. Is this something that is normal and shold be there even when I change over to copper?
There is nothing by the tub/shower area so just want to make it right. Opinions please

Air pipes? What are they connected to?
Ditto IMERC - water hammer dampers - from your description, the home grown / made up variety - work just as well as the manufactured variety.
I'd put them back in - helps quiet the pipes when a valve slams shut such as the toilet fill valve. Also helps with all other piping in the house.

Never underestimate the value of a sharp pencil or good light.
If that's what's being described, it's far better to buy dampers and install them rather than install pipe stubs. The pipe stubs get waterlogged quite easily.

The commercial dampers get waterlogged by exactly the same mechanism as the home grown variety.
I always have a few pipe stubs left at the end of the job - I can make a damper for the price of a T + street ell + cap. A little solder and I'm in business for at least several years. To extend useful service period - make them longer.
Cure is exactly the same for both - drain house piping and the problem is cured.
