I have an HO who wants a 30″ or so built in gas grill. I have done some masonry in the past and she wants something pretty basic. Seems pretty straightforward, but I have never done one. Any pitfalls out there?

My 2 cents worth would be to only build the masonry to act like a stand for the grill body so that when it breaks, it can be replaced with another.

Ditto Pete. I did one once for a 1,000 sf stone patio. Just had the mason build a base cabinet of stone and cmu, topped it with tile the HO selected, built it with a hole in the top sized per the grill mfgr so the unit would drop in. Looked sharp when it was done.
