I have lived in houses with smoke detectors for 25+ years, and except for one time when DW really overcooked something, they never wnet off. We have been in out current house less thasn 3 months and they have gone off 3 times, and from normal cooking. They appear to be original which makes them 12-13 yrs old. Hard wired with battery backup. Can they be too sensitive? I’m tired of it, and I’m ready to pull the plug.

Replace them with new and see if that helps. Too close to the stove might be a problem--you may end up relocating that one. Don't shut them off--smoke detectors save lives!
I've had to replace a coulpe in the "Spec house from hell", so no doubt they do go bad.
Sure is a pain when they decide to fire up at 3 AM for no apparent reason.
Of course they go "bad"... they even have an expiration date printed on the bottom. The detector part can't tell whether it's not seeing radiation because of smoke or a depleted source so it just screams at you regardless.
Cheap to replace ($10-$20) and be sure.
I had a 20 year old unit w/o battery fail one night at 10:30... the sound was so loud (and continuous) that it scared the kids and they froze in their beds. I'd previously trained them during tests, but the decibel level was terrifying.

Sounds like the "ion" type were used; no surprise there! These are quite sensitive to cooking (hot oil in the air), and do have a finite life - maybe 10 years.
I'd suggest checking the internet; the same maker might have a compatible 'photo-electric' type that you can use as a replacement.
