No. While you may consider using some kind of additive in the paint to lessen water damage, you will have to think about the probability of moisture penetration and excessive heat at the ceiling. While the painted plaster may seem to hold up for some time, the adjoining materials--framing, insulation--would not. But, these materials would not be easily inspected.
In the very least, you will want to install a waterproof membrane underneath the ceiling finish and slope the ceiling to aviod standing condensation.
