I need advice on a remodel. I have two floor to ceiling round columns leading into my dining room and want to convert them to square columns (without having to remove the column if possible). Any suggestions?

You could box in around them, but think very carefully about this - they will come out very fat (diamter of existing columns plus 2x the thickness of cladding).
Why do you want to do the change? Photos?
I once did this with lally columns holding up my porch roof, but they were undersize & visually awful to start with.
Print yourself a photo of the existing elevation, & draw on it exactly what you want to do, to scale...
(You can tellI'm a little worried about this, but others who know more than I will be along...)
So much easier to replace than to work around them and end up with oversized columns

What is the size of the current columns? If they are small( in proportion to what they should be) then yes, you can box around them but as the other two guys said, you don't want to box around them and then have something disproportionate looking.
