Is there a recommended depth for a poured cement shower pan 6′ x 3′? Any additives — perlite, etc — recommended to make cement lighter or to keep it from cracking? Thanks for any words of wisdom…

2.5" minimum thickness. You can go thicker, of course, but it sounds like you are concerned about weight. Cement mortar weighs about 12.5 lbs/sq. ft. (1 Sq. Ft. = 12 x 12 x 1")
I don't know enough about any volumetric additive so I can't say. I would, however, suggest you dig deeper in researching any materials before you think about adding them to the mix. Compaction, water absorption, porosity, etc. are some of the factors which may influence your choice of materials.
