Simple question….Is drywall all the same? Details: We are building a home and have received 4 different quotes for the drywall (from $17 a sheet to $9). Aside from the “stocking in the house” angle, I am simply asking about the product….. are there any quality differences that would warrant me essentially paying double the cost on 300+ sheets???

Thats up to your research. You have got some folks to check references on .
there are several thicknesses and types of drywall.
3/8",1/2" and 5/8" are all common thicknesses.
you can get standard drywall ,usually 1/2" thick, which is what's used most of the time on walls and ceilings; moisture resistant , which has a greenish color paper face; fire-resistant, typically 5/8", used in garages and areas that require it.
there are also other specialty drywalls- blue board for skim-coat plaster; bending drywall, for curved walls; and others, I'm sure.
If you are unsure about what you are paying for, you should ask.We can just guess about what's going on. Some yards charge extra for the delivery and stocking; some just factor that into their pricing.
