To answer your specific question, the d/wall taped seems will break down and start to peel, and on the ceilings it may start to develp 'ripples' between joists/rafters. You might think of using 1x4 T&G pine on your ceilings (narrower looks better on ceilings) and some sort of panelling on the walls. . . it's not particularly "classy" looking but there is a huge variety out there and you should be able to find something to your taste.
*Have a friend with a cabin in the interior of Alaska where the temps range from -70F to +95F on a seasonal basis. He has sheetrock on his walls and ceilings with no problems at all. The sheetrock has been there for over 10 years. Now, the area is relatively low humidity and he heats with wood when he is there, if those factors mean anything.Personally, I like knotty pine or western red cedar for this application. They go up easy, fit with the setting, and in the case of cedar can be left unfinished for pest and mosquito control. Certainly the cost is more, but to me the value is way more.
