I just finished my fire place suround and harth with nice 12×12 granite tile. I have about 7 pieces left over at about $7.00 each. Do I need to save these in case I my need to replace one. If I should save some, how many should I save? If I take them all back that $49.00 bucks in my pocket.

Since you have already spent the money, keep all the tiles. Next time try to estimate a little closer. If you had an unopened case, take it back.
If you want to get some $ but want to be prepared you should at least keep 4 and take back the rest. Then you would at least have $21.00 in your pocket. That could sure buy you something.
First you got to ask yourself: Will they take them back? Can I replace the tile if one fails? I personally keep the extra ones just in case. Darkworksite4: When the job is to small for everyone else, Its just about right for me"
Well, maybe! but that's a real definate maybe!
I used to keep every extra thing I could, (you never know syndrome) I'd put it away and well, how do you list where you have things? Sooner or later it becomes junk, clutter, debris etc.
Then evan if you remember saving them, the question is where did you save them? If I have a recept now, back it goes. (I know where I put my recepts)
Granite is pretty tough. shouldn't "fail". If it does, it didn't fail ,something else failed and you'll need to get to the root of that problem first. In doing so you will most likely need to replace more than seven tiles. Now what?
What are the odds of you actually needing those 7 tiles?
wanna know what I do? Probably not but......I save for a gig like youre talking about ..........about two tiles.....bettin you'll never use em' BUT after a year or two I take all my saved tiles and smash em to hell in a spackle bucket with the top of my sledge hammer and get out some ready mix crete and make mosaic tile counter tops for my deck...HAve some awesome designs
Be well
