I am building a set of bookshelves out of 3/4 Mahogony plywood. They will be 90″ high with a fixed center shelf. Rest of shelves will be adjustable.
I am planning to put a 1/2″ by 1″ Mahogony edging nailed and glued to front edge of each shelf. How wide can I make the shelf without risk of sagging under the weight of books? This will be used in a library so will be mostly full of books.
I’d like to go at least 30″ wide. If above will not support without sagging, any other suggestions?

30" should be ok. Options to increase success are to add another solid wood strip along the back, make the strip 1 1/2" - 2", add a line of adjustment holes doun the middle of the back of the cabinet and add a 5th support pin there.
3/4" plywood will do 30" no problem. Once you close in on 36" you'll be pushing it, unless the books are paperbacks.
If you kick the solid edging up to 3/4", it will help stiffen the shelves.....especially if you rabbet the back edge when joining.
