I’m getting quite a few knots falling out of my cedar siding. I was considering plugging them with some sort of wood plug, but the taper makes this seem too difficult. How about expandable foam then paint and stain to cover?

Leave it, stain it if you must, but it adds character that all the miles of vinyl siding will never have, so stop trying to make it look so perfect.
If you must do something, find a plug cutter the correct size, drill out the knot hole using a forstner bit and guide block, glue the plug using PL Premium, when glue is fully cured, use a block plane to shave the plug to the same plane as the siding. Prime and finish. And it will still have more character than ...

I'm not too excited about drilling and plugging 30 feet up a ladder! If I had a choice, I'd never use wood. All the warping and joints opening and closing makes it more like literal (aging) skin than I care for. I agree about vinyl though, I'd never do that either. Anyway, my idea of character is not really holes in my house. Let's face it, I'm kind of AR, though I don't sort my socks by color!Thanks,Jim
30 feet? You can see that far, let alone be concerned about a popped knot at that distance? I thought I was a perfectionist. LOL!
Just fill the hole with a good exterior caulk. Let dry, fill again, sand and stain or paint to match! Easy
Too late now, but when I put knotty cedar up on my own house I gooped some caulk adhesive on the back side - around the bigger knots that looked as though they might pop. Probably not SOP but I haven't lost any
in the last 10 years.

the james hardie cypress imprint cement plank stuff has no problem with knots.
