What would be on each side of a 36" wide unit that wouldn't be on each side of 30" unit with fillers?
A lot of manufacturers sell trim kits for the microwave, not sure I have ever seen one 36" wide
Can you explain the fire hazard your worried about?

Usually the uppers drop on each side of the oven. The 3" opening on each side of the microwave would be neglegable. Just pop the thing in there and call it done.
