I have a large attic space over a three car garage that I would like
to claim some space in. Could the roof be re-framed from the inside
with I-Joists or something comparable and the trusses cut-out’ to open
up the space? Any suggestions appreciated.

3 car...so your looking at a span of what?...30 foot?...that'll be some joist unless you plan to support from underneath.
Trusses can be cut but as you said you'll be looking for engineers advice. That is the bottom line. Go with it.
*Spanning 30' with an attic room and being stick built sounds almost impossible to me. It's further complicated by the fact that you're doing it from the inside. Forget about a 30' span with I-joists. I'd venture a guess that it would be cheaper and easier to remove the existing roof and replace it. Then you could either use attic trusses, or some beams and stick framing of one kind or another.
*Yes, you can re-frame a room over your garage providing the joists for the garage ceiling are an approved size for load and span. You will have to have an approved framing plan , probably with larger rafters that will be attached along side the existing rafters and supported by a pony wall on each side.The best way to bring the lumber in would be through the roof, perhaps a new dormer.Don't expect the contractor to bring materials for the job through your house, and please do hire a licensed contractor to do the job. *John, I have to ask. Why didn't you have this done while you were building your new house? It would have cost a tenth of what it will cost you now.
*John, Anything is possible. It depends on your level of tolerence and pocketbook.One surefire method to reduce costs would be to install a midspan support, which would require some posts inside the garage. Strategically placing these might make an impossible situation possible. I have two in my barn that don't bother me a bit. I also put one in my Huron "cottage".blue
*To answer a few questions. If the budget would of allowed at the time, and I would of won the argument, I would have more sq.footage in the garage then the house. I lost that one. I would like to take advantage of some of the attic space over part of the garage attic. The garage is a three car 24x24 double with 14x22 single. The current ceiling height is 14', all outside walls are 2x6. I planned for a future expansion out the rear of the garage an additional 14' to make a 14x38 workshop. The current roof was designed with this future space in mind, so all I will have to do is extend the roof line to the new outside wall. In other words the ridge of the current roof is centered 17' back from the front of the garage. The roof is 8/12 pitch. Once I saw the trusses for this go up, I kicked myself for not using some of that space.
*Double decker the cars on one side - 14" should be enough head room; the finish the other half of the garage. Make it a real challenge for the engineer.
