I have been asked to replace windows which have weight pockets, the exterior trim is set against stone and the trim and sill is good condition.
Can I slide a non- vinyl window into the old sash opening and just retrim, what do you do with the weight pocket, fill with insulation?
Which brand of window, the house has some Anderson casement also would like to match existing.

Restore the existing windows; save your customer money AND preserve the look of the house!
Yes, you can fill the weight pockets with insulation--don't pack it too tightly (if you use fiberglass--you can also use spray foam, but allow for it to expand or it will bind your new windows. I've only done replacement windows once and they were Jeld-Wen, if I recall correctly. They seemed okay.
Marvin has some excellent replacements that fit to th existing frame

All replacement windows, regardless of price, will not look as nice nor operate as well as the properly restored originals.
You will also save a boatload of money. Replacement windows to not pay for themselves. Ever.
If you want to cut air infiltration, then install good triple-track storms or better yet, wood storm sashes. Do not rely upon the primary windows for air-tightness and you will be set.
Of course, I hope your labor is cheap and your time plentiful.
We all have our opinions. In some cases there may be merit to yours. but you have not even seen what shape this guys are in. maybe you work cheap, but for me, restoring ( which I do in the right circumstances) is more expensive than replacements. And I know that triple track storms have more value than most people account for, but to criticize the look of replacements and then recommend those ugly things seems confusing to me.
